- 3 cups milk
- ¼ cup sugar
- ¼ cup creamy peanut butter
- 2 tablespoons cornstarch
- 1-ounce semi-sweet chopped baking chocolate
- ¼ cup butter
- 3 large eggs (yolks only)
- ½ cup chocolate chips
- Whipped cream
Instructions
- To make chocolate peanut butter pudding dessert, melt peanut butter and butter in a saucepan over low heat for 2 to 3 minutes or until melted.
- Add chocolate and continue cooking for 60 seconds or until smooth. Add milk and stir.
- Now, increase heat from low to medium and continue cooking for 4 to 5 minutes or until bubbles start to form around the saucepan’s edges.
- Add egg yolks, sugar, and cornstarch in a bowl and beat with a whisk. Stir a little amount of warm milk mixture into the egg blend with a whisk and mix well.
- Slowly add the egg mixture to the warm milk mixture and cook (stir continuously) for 1 to 2 minutes or until the mixture becomes thick.
- Transfer the instant chocolate pudding with peanut butter to individual pudding serving dishes.
- If not eating immediately, cover with plastic wrap directly over the hot pudding to inhibit skin from making in the pudding.
- Refrigerate until completely cooled. Garnish with chocolate chips and whipped cream, if desired.
