ToggleChicken Marinade For The Grill Recipe
Ingredients
- ½ cup extra virgin olive oil
- ½ cup balsamic vinegar (or any other vinegar you like)
- ¼ cup low sodium soy sauce
- ¼ cup Worcestershire sauce
- ⅛ cup lemon juice
- ¾ cup brown sugar
- 2 teaspoons dried rosemary
- 2 tablespoons Dijon or spicy brown mustard
- 1 ½ teaspoons salt
- 1 teaspoon ground black pepper
- 2 teaspoons garlic powder
- 6 chicken breasts (or about 3.5 lbs of chicken)
Instructions
- In a big bowl, whisk together all the ingredients except the chicken. This creates your marinade. Scoop out half a cup of this marinade and keep it aside for later; you’ll use it for basting the chicken while it grills.
- Put the chicken in a large zip-lock bag and pour the rest of the marinade over it. Seal the bag tightly after squeezing out the air, then give it a gentle shake and a squeeze to make sure the chicken is well coated.
- Pop the chicken in the fridge. Let it marinate for at least 30 minutes, though I find that 4 to 6 hours gives the best flavor. If you’re short on time, you can poke some holes in the chicken with a fork before marinating to help it soak up the flavors faster.
Grilling Your Chicken
- Heat your grill to medium-high and brush the grates lightly with oil.
- Take the chicken out of the marinade and let the extra drip off. Place the chicken on the grill and cook for about 5 to 6 minutes on each side, or until it’s fully cooked.
- While grilling, baste the chicken occasionally with the marinade you set aside earlier.
- Once the chicken reaches an internal temperature of 165°F, take it off the grill. Cover it loosely with aluminum foil and let it rest for 5 minutes. This helps the juices settle back into the meat, making it extra tasty.
