Have you ever felt torn between wanting something delicious and keeping your diet goals on track?

The strawberry chicken salad blends taste and health seamlessly, making it a go-to recipe no matter the occasion or time of year.

Personally, I discovered the magic of this salad during a family picnic in the park, where the vibrant mix of strawberry and chicken—all sprinkled with almonds and crumbled goat cheese—became an instant hit.

It wasn’t just the fresh ingredients but the drizzle of balsamic vinaigrette that tied everything together, enhancing the flavor to impress every mouth.

This salad is not only easy to make but can be prepared ahead of time and stored in the fridge, perfect for busy weeks.

The secret lies in its freshness and the deliciousness of combining strawberries with veggies, ensuring every bite supports your healthy lifestyle.

Whether you’re packing it for an instant lunch or planning a dessert like cheesecake to follow, this salad stands top on my list of recipes.

I’ve grown to love its sweet yet tangy profile, which never fails to make a regular day feel like a special occasion.

Adding a touch of lemon to the dressing or a splash of water to thin it out can be your own twist to this perfect salad.

Strawberry Chicken Salad With Balsamic Dressing Recipe

For The Salad

  • 2 cups of cooked chicken, chopped
  • 4 cups of romaine lettuce, chopped
  • 2 cups of fresh strawberries, chopped
  • 1/2 cup of dried cranberries
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of goat cheese, crumbled
  • 1/4 cup of almonds, sliced

Strawberry Balsamic Dressing

  • 1 cup of fresh strawberries
  • 1/4 cup of balsamic vinegar
  • 1/4 cup of extra-virgin olive oil
  • 1 tablespoon of Dijon mustard
  • 1 clove of garlic, minced
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper

  1. Make the Dressing: First, grab your strawberries, balsamic vinegar, olive oil, Dijon mustard, garlic, salt, and pepper and put them all into a blender. Whizz everything together until it’s super smooth. Once it’s ready, just put it to the side for a bit.
  2. Prepare the Salad: Take a big bowl and throw in the chopped cooked chicken, chopped romaine lettuce, chopped fresh strawberries, dried cranberries, thinly sliced red onion, crumbled goat cheese, and sliced almonds. Give everything a good mix.
  3. Dress it Up: Now, you can either pour the strawberry dressing you made earlier all over the salad and mix it up again, or you can serve the salad on plates and drizzle the dressing over each portion.
