  • 4 drops natural blue food coloring (or butterfly pea powder extract)
  • 1 teaspoon lemon juice

Instructions

  1. In a blender, add sliced strawberries, ½ tablespoon honey, and 1 tablespoon water. Blend until smooth. Spoon the strawberry mixture evenly into the bottom of the molds, filling about ⅓ of the way. Tap the molds gently to level the surface. Place a few thin slices of strawberries upright along the mold sides if desired for that layered look. Freeze for 30–40 minutes until just firm enough to hold the next layer.
  2. In a small bowl, mix Greek yogurt with ½ tablespoon honey and ½ tablespoon water. Stir until silky and pourable, but not too thin. Carefully spoon this over the frozen red layer, filling the next ⅓ of the mold. Use a spoon to spread gently to avoid mixing layers. Freeze again for 30–40 minutes until set.
  3. Blend blueberries with ¼ tablespoon honey, ½ tablespoon water, and lemon juice. Strain the mixture through a fine mesh sieve to remove skins for a smoother finish. Add a few drops of natural blue food coloring for a more vivid blue. Pour this over the white layer, filling to the top. Add whole blueberries upright near the mold sides for visual texture.
  4. Insert wooden sticks gently through the center. Freeze the entire mold for at least 4–6 hours, or overnight, until fully solid.
  5. To release the popsicles, run the mold under warm water for 15–20 seconds, then gently pull out the popsicles. Serve immediately, or place on a chilled platter over ice.
