Football Whoopie Pies Recipe

Ingredients

For The Whoopie Pies

  • 1 batch chocolate cake batter (recipe below)
  • ½ cup salted caramel sauce (store-bought or homemade)

For The Marshmallow Frosting

  • 8 egg whites
  • 2 cups sugar
  • ½ teaspoon cream of tartar
  • 2 teaspoons vanilla extract

Chocolate Cake Batter

  • 1 ½ cups all-purpose flour (substitute with gluten-free flour blend)
  • 1 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup sugar (use coconut sugar if preferred)
  • 1 large egg (use flax egg for vegan: 1 tbsp flax meal + 3 tbsp water)
  • 1 cup milk (use almond milk for vegan)
  • ½ cup vegetable oil (or coconut oil)

Instructions

Make The Marshmallow Frosting

  1. In a heatproof bowl, add the egg whites, sugar, and cream of tartar. Place the bowl over a pot of simmering water. Stir for 3-4 minutes until the sugar dissolves and the mixture warms up.
  2. Transfer to a mixer and beat on high for 5-7 minutes until the frosting forms stiff peaks. Add vanilla and mix.

Make The Whoopie Pies

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Prepare the chocolate cake batter by mixing all ingredients together until smooth. Fill a piping bag with the batter.
  3. Pipe small circles, about 2 inches wide, on the baking sheet. For football shapes, pipe them in a football shape.
  4. Bake for 8 minutes. Let them cool for 2 minutes on the sheet, then transfer to a cooling rack.

Assemble

  1. Once the cakes are cooled, pair them up by size.
  2. Pipe a good amount of marshmallow frosting on one side of each pair.
  3. Lightly toast the frosting with a kitchen torch for a golden finish.
  4. Drizzle with caramel sauce and place the second piece on top to form a sandwich.

How To Store Whoopie Pies?

To keep your whoopie pies fresh and delicious, follow these simple storage tips:

  • Room temperature: Store whoopie pies in an airtight container at room temperature for up to 2 days. This will keep the cakes soft and moist.
  • Refrigeration: If you want to store them longer, keep them in the fridge for up to 5 days. Just make sure they are in an airtight container to prevent them from drying out.
  • Freezing: If you need to freeze them, wrap each whoopie pie individually in plastic wrap, then place them in a freezer-safe bag or container. They can be stored in the freezer for up to 2 months. Let them thaw at room temperature for about 30 minutes before serving.

How To Prevent Football Whoopie Pies From Sticking?

Nothing is worse than a stuck whoopie pie when you’re trying to bake! Here are some tips to prevent that from happening:

  • Use parchment paper: Line your baking sheet with parchment paper to prevent the pies from sticking.
  • Grease the pan lightly: If you’re not using parchment paper, lightly grease your baking sheet with oil or non-stick spray.
  • Proper cooling: Allow the pies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack. This helps them firm up and reduces sticking.

Why Did My Football Whoopie Pies Go Flat?

If your whoopie pies didn’t come out as fluffy as expected, there could be a few reasons. Here’s how to prevent that from happening next time:

  • Not enough leavening: Make sure you’re using the right amount of baking soda and baking powder. Too little can result in flat pies.
  • Overmixing the batter: Overmixing the batter can cause the air bubbles to deflate, resulting in dense, flat cakes. Stir until just combined.
  • Batter consistency: If your batter is too runny, it may spread out too much during baking, resulting in flat pies. Adjust by adding a little extra flour if needed.
  • Baking temperature: If the oven is too hot or too cold, it can affect how the whoopie pies rise. Make sure your oven is preheated to the right temperature and use an oven thermometer to ensure accuracy.
