Wash the strawberries thoroughly, remove the stems, and dice them into small, even pieces. Smaller pieces freeze better and distribute more evenly in each bite.
In a mixing bowl, add the Greek yogurt, honey, vanilla extract, and lemon juice. Stir slowly until the mixture is completely smooth and evenly combined.
Gently fold the diced strawberries into the yogurt mixture, taking care not to crush them. You want visible strawberry pieces in every scoop.
Line a baking tray or flat plate with parchment paper. Using a spoon or small cookie scoop, drop small portions of the mixture onto the lined surface, spacing them slightly apart.
Lightly tap the tray on the counter to help the bites settle into neat shapes.
Place the tray in the freezer and freeze for at least 2½ to 3 hours, or until the bites are fully set and firm to the touch.
Once frozen, transfer the yogurt bites to an airtight container or freezer bag for storage.
