Ingredients

  • 2 cups thick plain Greek yogurt
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 medium ripe bananas sliced into thin rounds
  • 1/3 cup natural creamy peanut butter
  • 100 grams dark chocolate
  • 1 tablespoon coconut oil
  • 1/4 cup crushed roasted peanuts

Method

  1. Line a flat tray or baking sheet with parchment paper and set it aside.
  2. In a mixing bowl, combine the Greek yogurt, honey, and vanilla extract.
  3. Whisk until the mixture is smooth, creamy, and fully blended with no streaks.
  4. Pour the yogurt mixture onto the lined tray.
  5. Use a spatula to spread it into an even layer about 1/4 to 1/3 inch thick.
  6. Arrange the banana slices evenly across the yogurt base, gently pressing them in so they stick.
  7. Warm the peanut butter slightly until it becomes pourable.
  8. Drizzle the peanut butter over the bananas in thin ribbons.
  9. Melt the dark chocolate and coconut oil together using a microwave or double boiler.
  10. Stir until the chocolate is completely smooth and glossy.
  11. Drizzle the melted chocolate over the yogurt and peanut butter layer.
  12. Sprinkle the crushed peanuts evenly across the top.
  13. Lightly tap the tray on the counter to help everything settle into the surface.
  14. Place the tray in the freezer for 3 to 4 hours, or until fully frozen and firm.
  15. Once frozen solid, lift the bark out using the parchment paper.
  16. Break or cut into irregular pieces using a sharp knife.
  17. Serve immediately or store in the freezer.
