Ingredients
  

  • 2 blocks 16 oz cream cheese, softened
  • 2 cups shredded sharp cheddar cheese plus extra for coating
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard Dijon or yellow, as per preference
  • 1 cup finely chopped pecans or walnuts optional, for texture
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh chives
  • 1 small bunch fresh parsley for garnish, to mimic carrot tops
For Serving
  • Crackers round butter crackers or whole wheat
  • Carrot sticks cucumber slices, cherry tomatoes, black olives

Method
 

  1. In a large mixing bowl, combine softened cream cheese, 2 cups shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, black pepper, Worcestershire sauce, and mustard. Stir until smooth and well mixed.
  2. If using nuts for texture, fold in finely chopped pecans or walnuts. Also, mix in the chopped parsley and chives for a subtle freshness.
  3. Transfer the mixture onto a large piece of plastic wrap. Shape it into a slightly tapered, rounded triangle resembling a carrot. Wrap tightly and refrigerate for at least 2 hours (or overnight for best flavor).
  4. Before serving, remove from the fridge and unwrap. Coat the entire surface generously with shredded cheddar cheese, pressing gently so it adheres well.
  5. Arrange fresh parsley stems at the top to resemble carrot greens.
  6. Place on a serving platter and surround with crackers, carrot sticks, cucumber slices, cherry tomatoes, and black olives for a beautiful presentation.
  7. Serve immediately or refrigerate until ready to serve.
