Line a large baking sheet or flat tray with parchment paper and make sure it fits comfortably inside your freezer. Set it aside before you begin.
In a medium mixing bowl, add the Greek yogurt, honey or maple syrup, vanilla extract, lemon zest, and salt. Stir slowly but thoroughly until the mixture is completely smooth and evenly sweetened. Take your time here to avoid overmixing and thinning the yogurt.
Gently fold the blueberries into the yogurt mixture using a spatula. Use a light hand so some blueberries stay whole while others slightly streak the yogurt, creating a natural swirl effect.
Using a tablespoon or small cookie scoop, portion the mixture onto the prepared baking sheet, spacing each bite slightly apart. Each portion should be mounded rather than spread flat.
Lightly tap the tray on the counter once or twice to help the bites settle into a rounded shape without flattening.
Place the tray in the freezer, uncovered, and freeze for at least 2 to 3 hours, or until the bites are completely firm to the touch.
Once fully frozen, transfer the yogurt bites to an airtight container or freezer-safe bag. Store them in the freezer and remove only what you need.
