  • 8 ounces turkey bacon
  • 8 ounces cavatappi or bowtie pasta (or your favorite pasta)
  • 1 pint cherry tomatoes, halved (opt for heirloom cherry tomatoes for a splash of color)
  • 1½ cups corn (grilled, raw, or sautéed)
  • ¼ cup thinly sliced red onion (or substitute with diced green onion)
  • 1 slightly ripe avocado, diced

For The Greek Yogurt Ranch


  1. Prepare the Chicken: Grill or cook your chicken in advance. You can dice the chicken into ½-inch cubes or shred it. Diced chicken is recommended for this recipe, but use what you prefer or have ready.
  2. Cook the Turkey Bacon: In a large skillet over medium heat, add turkey bacon and cook until crispy and golden brown. If the pan smokes, lower the heat to medium-low. Once cooked, use a paper towel to blot out excess grease, then chop the bacon into bite-sized pieces and set aside.
