Equipment Needed

  • Barbecue metal skewers


  • 2 pounds beef sirloin, cut into 1-inch cubes
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, finely minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon cardamom
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 large yellow onion, cut into 2-inch chunks
  • 1 red pepper, cut into squares
  • Chopped parsley for garnish


  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, cumin, paprika, cardamom, salt, and black pepper. Whisk together until well blended. Add the beef cubes to the bowl and toss to ensure each piece is evenly coated with the marinade. Let the beef marinate for at least 2 hours, or up to 24 hours for deeper flavor.
